lipogram
A word or writing that does not use a particular symbol or symbols.
"Transubstantiationalists" is a particularly long single-word lipogram, not using the letter "e".

From Ancient Greek λειπογγράμμα (leipongrámma), from λείπω (leípō, “leaving out”) + γράμμα (grámma, “letter”), 18th c. By surface analysis, lipo- + -gram.
